1 lb ground beef or Italian sausage

1 medium onion, chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

4 cups beef broth

2 cups heavy cream

2 cups cooked lasagna noodles, broken into bite-sized pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus more for garnish

1/2 cup grated Parmesan cheese

1 tablespoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

In a large pot or Dutch oven, brown the ground beef or sausage over medium heat until fully cooked. Drain excess fat if necessary.

    Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute, until fragrant.

      Pour in the diced tomatoes with their juices and beef broth. Stir well to combine and bring to a simmer.

        Reduce heat and add in the heavy cream, stirring until the soup is well mixed and creamy.

          Add the broken lasagna noodles to the pot and continue to simmer for about 10-12 minutes, or until the noodles are tender.

            Stir in the ricotta, mozzarella, and Parmesan cheeses until melted, creating a rich, cheesy texture.

              Season with Italian seasoning, salt, and pepper to taste. Adjust the seasoning as needed.

                Serve hot, topped with additional mozzarella cheese and fresh basil leaves for garnish.
