1 lb ground beef or Italian sausage

1 medium onion, chopped

3 cloves garlic, minced

1 (14 oz) can diced tomatoes, with juices

2 cups tomato sauce

4 cups chicken or vegetable broth

1 tsp Italian seasoning

1 tsp dried basil

1 tsp salt

½ tsp black pepper

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil for garnish (optional)

Cook the Meat: In a large pot over medium heat, add the ground beef or sausage. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.

    Sauté Aromatics: Add the chopped onion to the pot and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Combine Ingredients: Pour in the diced tomatoes with juices, tomato sauce, and broth. Stir well to combine everything, then add the Italian seasoning, dried basil, salt, and pepper. Bring the mixture to a simmer.

        Add Noodles: Once the soup is simmering, add the broken lasagna noodles. Cook uncovered for about 10-12 minutes, or until the noodles are tender.

          Prepare Cheese Mixture: In a separate bowl, mix together the ricotta cheese, half of the mozzarella, and half of the Parmesan.

            Finish the Soup: Stir the cheese mixture into the soup until well incorporated. Allow the soup to heat through for another 2-3 minutes, ensuring the cheeses are melted and creamy.
