Hearty Lentil Soup

1 cup green or brown lentils, rinsed and drained

1 tablespoon olive oil

1 medium onion, finely chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

6 cups vegetable broth

1 can (14.5 oz) diced tomatoes, undrained

1 bay leaf

1 teaspoon dried thyme

Salt and pepper to taste

2 cups chopped kale or spinach

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent.

    Add Veggies: Stir in the diced carrots and celery, cooking for an additional 4-5 minutes until they begin to soften.

      Flavor It Up: Add the minced garlic, ground cumin, and smoked paprika. Stir constantly for 1-2 minutes until fragrant.

        Combine the Soup Ingredients: Add the rinsed lentils, vegetable broth, diced tomatoes, bay leaf, dried thyme, salt, and pepper. Bring to a boil.

          Simmer: Reduce the heat to low and let the soup simmer for about 30-35 minutes until the lentils are tender, stirring occasionally.

            Add Greens: Stir in the chopped kale or spinach, cooking for another 5 minutes until wilted.

              Finish with Lemon: Remove from heat, add the lemon juice, and adjust seasoning with more salt and pepper if desired.
