Breakfast is often touted as the most important meal of the day, and for good reason. It serves as a vital source of energy, kickstarting our metabolism and setting the tone for a productive day ahead. A wholesome breakfast not only fuels our bodies but also supports cognitive function, improves mood, and can even help manage weight. In our fast-paced lives, however, it's all too easy to skip breakfast or settle for something less than nutritious. This is where the concept of one-pan meals shines, bringing convenience and flavor to the breakfast table.

Ingredients

4 large eggs

1 cup diced potatoes (preferably small cubes)

1 cup bell peppers (red and green), diced

1 small onion, diced

1 cup cooked breakfast sausage, crumbled (or plant-based alternative)

1 cup spinach leaves, roughly chopped

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon black pepper

1/4 teaspoon salt (to taste)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Shredded cheese (optional, for topping)

Instructions

Cook the Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced potatoes, and sprinkle with a little salt. Cook for about 10-12 minutes, stirring occasionally, until golden and tender.

Sauté the Vegetables: Add the diced onions and bell peppers to the skillet, cooking for an additional 4-5 minutes until the vegetables are softened.

Add Sausage and Spinach: Stir in the crumbled breakfast sausage, garlic powder, paprika, black pepper, and salt. Cook for another 3 minutes, letting everything heat through. Stir in the chopped spinach until wilted.

Create Wells for the Eggs: Using a spoon, create small wells in the mixture for the eggs. Crack an egg into each well carefully.

Cover and Cook: Cover the skillet with a lid and cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny (or to your desired doneness).

Serve: Remove from heat and garnish with chopped parsley and shredded cheese, if desired. Serve hot directly from the skillet for a hearty breakfast.
