12 oz penne pasta

1 lb Italian sausage (mild or spicy, casings removed)

2 cups fresh spinach, chopped

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

2 cups heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Sausage: In a large skillet or pan over medium heat, add the olive oil. Once hot, add the Italian sausage and cook, breaking it apart with a wooden spoon, until browned and cooked through (about 5-7 minutes). Remove the sausage from the pan and set aside.

    Sauté Aromatics: In the same pan, add the chopped onion and garlic. Sauté for about 3-4 minutes or until the onion becomes translucent and fragrant.

      Incorporate Tomatoes: Add the canned diced tomatoes (with juice) to the pan and stir well. Cook for 2-3 minutes to let the flavors combine.

        Cook the Pasta: Add the penne pasta to the pan along with 4 cups of water and the Italian seasoning. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 12 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
