Ingredients
  

1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 can (14.5 oz) diced tomatoes, undrained

4 cups chicken broth

1 cup heavy cream

1 cup fresh spinach, chopped

1 cup grated Parmesan cheese, plus more for garnish

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 tablespoons olive oil

Crusty bread or garlic bread for serving (optional)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are soft and the onion is translucent.

    Add the minced garlic to the pot and cook for another minute until fragrant.

      Increase the heat slightly and add the Italian sausage, breaking it up with a spoon as it cooks. Brown the sausage for about 5-7 minutes until it is cooked through.

        Stir in the can of diced tomatoes (with juice), chicken broth, dried oregano, and dried basil. Bring the mixture to a simmer and let it cook for about 10 minutes.

          Lower the heat and slowly stir in the heavy cream, allowing the soup to become velvety and rich.

            Add the chopped spinach and grated Parmesan cheese, stirring until the spinach wilts and the cheese is melted. Season with salt and pepper to taste.

              Let the soup simmer for an additional 5 minutes to meld the flavors together.

                Serve hot, garnished with additional grated Parmesan cheese, and with crusty or garlic bread on the side if desired.
