Ingredients
  

1 cup wild rice, rinsed and drained

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

8 ounces cremini mushrooms, sliced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

6 cups vegetable broth

2 cups water

1 bay leaf

1 cup heavy cream or coconut milk (for a dairy-free option)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

    Stir in the garlic and cook for an additional minute until fragrant.

      Add the sliced mushrooms and cook until they release their moisture and start to brown, around 5-7 minutes.

        Toss in the diced carrots and celery, and sauté for another 3-4 minutes until they soften slightly.

          Stir in the rinsed wild rice, thyme, and rosemary, ensuring everything is well combined.

            Pour in the vegetable broth and water, then add the bay leaf. Bring the mixture to a boil.

              Once boiling, reduce the heat to low, cover, and let simmer for about 45-50 minutes, or until the wild rice is tender.

                Remove the bay leaf, and stir in the heavy cream or coconut milk. Season with salt and pepper to taste. Allow to heat through for 5 minutes.

                  Ladle the soup into bowls and garnish with freshly chopped parsley.
