For the cake:

1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsweetened cocoa powder

1 tsp baking powder

1 tsp baking soda

½ tsp salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 tsp vanilla extract

1 cup boiling water

For the cherry filling:

2 cups fresh or frozen cherries, pitted

¾ cup granulated sugar

2 tbsp cornstarch

¼ cup water

1 tsp vanilla extract

For the cream cheese frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

2 tbsp heavy cream (optional for thinner consistency)

For garnish:

Fresh cherries

Chocolate shavings

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Make the Cake Batter: In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix until well blended. In another bowl, whisk together the eggs, milk, oil, and vanilla. Gradually add to the dry ingredients, mixing until just combined. Carefully stir in the boiling water until the batter is smooth.

      Bake the Cake: Divide the batter evenly between the two prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

        Prepare the Cherry Filling: In a medium saucepan, combine cherries, sugar, cornstarch, water, and vanilla. Cook over medium heat until the mixture begins to bubble and thicken (about 5-7 minutes). Remove from heat and let it cool slightly.

          Make the Cream Cheese Frosting: In a large mixing bowl, beat together the softened cream cheese and butter until creamy. Gradually add in the powdered sugar and vanilla, mixing until smooth. If desired, add heavy cream to achieve the desired frosting consistency.

            Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread half of the cherry filling over the first layer, then top with a generous layer of cream cheese frosting. Place the second cake layer on top, and frost the top and sides of the entire cake with the remaining frosting.

              Garnish: Decorate the top of the cake with the remaining cherry filling, fresh cherries, and chocolate shavings.
