3 ripe bananas, mashed

1/2 cup melted coconut oil (or unsalted butter)

3/4 cup brown sugar, packed

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.

    In a large mixing bowl, combine the mashed bananas and melted coconut oil. Stir until well mixed.

      Add in the brown sugar, beaten egg, and vanilla extract. Mix well until the ingredients are fully incorporated.

        In another bowl, whisk together the baking soda, baking powder, salt, and flour until combined.

          Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Do not overmix.

            Fold in the chocolate chips and walnuts (if using) until they are evenly distributed throughout the batter.

              Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.

                Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                  Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
