Ingredients
  

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened (plus more for greasing)

2 large eggs

1/2 teaspoon vanilla extract

1/4 cup milk

1/4 cup sour cream

1/3 cup mini chocolate chips (optional)

Powdered sugar, for dusting

Fresh berries, for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a mini cupcake tin with butter or line with mini cupcake liners for easier removal.

    In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

      In another bowl, cream the softened butter using an electric mixer until fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        Gradually add the dry flour mixture to the wet ingredients while mixing on low speed. Alternate adding the milk and sour cream until just combined. Do not overmix. If using, fold in the mini chocolate chips gently.

          Spoon the batter into the prepared mini cupcake tin, filling each cup about 2/3 full.

            Bake in the preheated oven for about 12–15 minutes, or until a toothpick inserted into the center comes out clean.

              Once baked, remove the tin from the oven and allow the cakes to cool in the pan for about 5 minutes. Then, transfer the mini cakes to a wire rack to cool completely.

                Once cooled, dust the mini soft cakes with powdered sugar and garnish with fresh berries if desired.

                  Serve you Heavenly Mini Soft Cakes warm or at room temperature, and enjoy!
