Ingredients

1 cup all-purpose flour

1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/4 cup milk

1/2 cup mini chocolate chips (optional)

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it with cooking spray.

Mix Dry Ingredients: In a small bowl, sift together the flour, baking powder, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

Combine Dry and Wet Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined; be careful not to overmix.

Fold in Chocolate Chips: If using, gently fold in the mini chocolate chips to the batter.

Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.

Bake: Bake in the preheated oven for 12-15 minutes, or until the cakes are lightly golden and a toothpick inserted into the center comes out clean.

Cool and Serve: Let the mini cakes cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.

Enjoy: Serve these heavenly mini soft cakes as a delightful treat for afternoon tea or as a sweet bite for any occasion!
