10 chicken drumsticks

1/2 cup unsalted butter, softened

3 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon lemon zest

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

Juice of 1 lemon

Fresh herbs for garnish (optional)

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Herb Butter: In a mixing bowl, combine the softened butter, minced garlic, rosemary, thyme, parsley, lemon zest, smoked paprika, salt, and pepper. Mix well until all ingredients are thoroughly incorporated.

      Prep Drumsticks: Rinse the chicken drumsticks under cold water and pat them dry with paper towels. This will help the skin crisp up during roasting.

        Apply Herb Butter: Carefully loosen the skin on each drumstick using your fingers. Be gentle to avoid tearing the skin. Take a generous tablespoon of the herb butter mixture and spread it under the skin, then rub any remaining butter all over the outside of the drumsticks.

          Season and Arrange: Place the coated drumsticks in a large baking dish or on a lined baking sheet. Drizzle with olive oil, sprinkle with additional salt and pepper, and squeeze the juice of one lemon over the chicken.

            Roast the Chicken: Roast in the preheated oven for 35-45 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the skin is golden brown and crispy. Turn the drumsticks halfway through cooking for even browning.

              Rest and Serve: Once done, remove from the oven and let the chicken rest for 5-10 minutes. Garnish with fresh herbs if desired and serve hot alongside your favorite sides.
