Hibachi Fried Rice

Ingredients
  

3 cups of cooked jasmine rice (preferably day-old)

2 tablespoons of vegetable oil

1 tablespoon of sesame oil

2 large eggs, beaten

1 cup of mixed vegetables (peas, carrots, and corn)

3 green onions, chopped

3 cloves of garlic, minced

1 tablespoon of soy sauce (add more to taste)

1 tablespoon of teriyaki sauce (optional)

Salt and pepper to taste

½ cup cooked chicken, shrimp, or beef (optional)

Instructions
 

Prepare the Rice: If using freshly cooked rice, spread it out on a baking sheet to cool and dry out slightly. Day-old rice works best as it’s less sticky.

    Heat the Wok: In a large skillet or a wok, heat up the vegetable oil over medium-high heat.

      Cook the Eggs: Pour the beaten eggs into the pan and scramble them until fully cooked. Remove the eggs from the pan and set aside.

        Stir-Fry Vegetables: Add sesame oil to the pan. Sauté the garlic for about 30 seconds until fragrant. Then, add the mixed vegetables and cook until they are tender but still vibrant in color (about 3-4 minutes).

          Add Rice: Toss in the cooked rice, breaking up any clumps. Stir well and let it fry for about 5 minutes, allowing the rice to absorb the flavors and get a slight crisp.

            Combine Ingredients: Add the scrambled eggs back to the pan, followed by the chopped green onions, soy sauce, and teriyaki sauce (if using). Mix thoroughly, ensuring the rice is evenly seasoned.

              Add Protein (Optional): If desired, incorporate the cooked chicken, shrimp, or beef into the fried rice and stir until everything is well combined and heated through.

                Season: Taste the fried rice and season with salt and pepper as needed for your preference.
