Ingredients

For the Muffins:

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 large egg

1 cup buttermilk (or milk mixed with 1 tablespoon vinegar)

½ cup unsalted butter, melted

2 cups fresh blueberries (or frozen, if fresh isn’t available)

1 teaspoon vanilla extract

For the Streusel Topping:

½ cup all-purpose flour

½ cup rolled oats

⅓ cup brown sugar, packed

½ teaspoon cinnamon

¼ cup unsalted butter, softened

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

Prepare the Streusel: In a medium bowl, combine ½ cup flour, rolled oats, brown sugar, and cinnamon. Mix well. Add the softened butter and use a fork or your fingers to blend until crumbly. Set aside.

Mix Dry Ingredients for Muffins: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, whisk the egg, buttermilk, melted butter, and vanilla extract until fully mixed.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

Fold in Blueberries: Gently fold in the blueberries with a spatula until evenly distributed throughout the batter.

Fill Muffin Tin: Spoon the muffin batter into the prepared muffin tins, filling each cup about ¾ full.

Add Streusel Topping: Generously sprinkle the streusel topping over each muffin batter cup.

Bake: Place in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Cool and Serve: Allow muffins to cool in the pans for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
