1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

3 celery stalks, sliced

8 cups low-sodium chicken broth

2 cups cooked chicken, shredded (rotisserie or poached)

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 bay leaf

1 cup egg noodles

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lemon (optional, for brightness)

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Carrots and Celery: Add the sliced carrots and celery to the pot. Sauté for about 5-7 minutes until the vegetables begin to soften.

      Combine Ingredients: Pour in the chicken broth and bring the mixture to a boil. Add the shredded chicken, dried thyme, dried rosemary, and bay leaf. Season with salt and pepper to taste.

        Simmer: Reduce the heat to low and let the soup simmer uncovered for 20 minutes to allow the flavors to meld.

          Cook Noodles: After simmering, add the egg noodles to the pot and continue to cook for an additional 8-10 minutes, or until the noodles are al dente.

            Finishing Touches: Remove the bay leaf, stir in the lemon juice if using, and check for seasoning – adjust salt and pepper if necessary.
