Homemade Fudgy Chocolate Cake

1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons pure vanilla extract

1 cup boiling water

1 cup semi-sweet chocolate chips (optional for extra fudginess)

1 cup heavy whipping cream (for frosting)

2 tablespoons powdered sugar (for frosting)

½ teaspoon vanilla extract (for frosting)

Instructions
 

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper for easy removal.

    In a large mixing bowl, combine the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until evenly mixed.

      Add the eggs, whole milk, vegetable oil, and vanilla extract to the bowl. Beat on medium speed with an electric mixer for about 2 minutes until well combined.

        Carefully stir in the boiling water. The batter will be thin; this is normal. If you're using chocolate chips, fold them into the batter now.

          Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

            Once baked, remove from the oven and let them cool in the pans for about 10 minutes. Then, turn the cakes out onto wire racks to cool completely.

              While cakes are cooling, prepare the frosting. In a mixing bowl, pour in the heavy whipping cream and beat until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form.

                Once the cakes are cool, place one layer on a serving plate. Spread a generous amount of the whipped cream frosting on top. Place the second layer on top and spread frosting on the top and sides of the entire cake.
