2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans), chopped

1/2 cup honey or maple syrup

1/2 cup natural peanut butter or almond butter

1/2 cup dried cranberries or raisins

1/2 cup dark chocolate chips (optional)

1/2 tsp vanilla extract

1/4 tsp salt

1/2 tsp cinnamon

Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, allowing the paper to hang over the edges for easy removal.

    Toast Oats and Nuts: Spread the rolled oats and chopped mixed nuts evenly on a baking sheet. Toast in the preheated oven for about 10-12 minutes, stirring halfway through, until lightly golden and fragrant.

      Combine Wet Ingredients: In a medium saucepan over low heat, combine honey (or maple syrup) and peanut (or almond) butter. Stir until melted and smooth. Remove from heat and add in the vanilla extract, salt, and cinnamon.

        Mix Ingredients: In a large mixing bowl, combine the toasted oats and nuts with the dried cranberries (or raisins). Pour the warm honey mixture over the dry ingredients and mix well until everything is evenly coated. If you're including chocolate chips, add them last to prevent melting.

          Press into Pan: Transfer the mixture into the prepared baking pan. Using a spatula or your hands, press down firmly to create an even layer. The tighter you pack it, the less crumbly your bars will be.

            Bake: Bake in the oven for 15-20 minutes, until the edges are golden brown. Keep an eye on them to prevent overbaking.
