2 cups granulated sugar

1/2 cup light corn syrup

1/2 cup water

2 large egg whites

1/4 teaspoon cream of tartar

1 teaspoon vanilla extract

Prepare the Sugar Syrup: In a medium saucepan, combine granulated sugar, light corn syrup, and water. Stir to dissolve the sugar. Place the saucepan over medium heat and bring the mixture to a boil. Do not stir once it starts boiling. Allow it to boil until the temperature reaches 240°F (115°C) on a candy thermometer (soft ball stage).

    Whip the Egg Whites: While the sugar syrup is boiling, place egg whites and cream of tartar in a large mixing bowl. Using an electric mixer, whip the egg whites on medium speed until soft peaks form.

      Combine Sugar Syrup and Egg Whites: Once the sugar syrup reaches 240°F, remove it from the heat. With the mixer running on low speed, carefully drizzle the hot syrup into the whipped egg whites. Make sure to pour it slowly to avoid cooking the egg whites.

        Whip Until Fluffy: Increase the mixer speed to high and continue to whip until the mixture is thick, glossy, and cool to the touch—about 5 to 7 minutes. Add the vanilla extract and a pinch of salt. Continue whipping for an additional minute to fully incorporate.
