2 large yellow onions

1 cup all-purpose flour

1 tsp garlic powder

1 tsp paprika

½ tsp cayenne pepper (optional, for heat)

1 tsp salt

½ tsp black pepper

1 cup buttermilk (or regular milk with 1 tbsp lemon juice)

1 cup breadcrumbs (panko or regular)

Vegetable oil (for frying)

Prepare the Onions: Peel the onions and slice them into ½-inch thick rings. Carefully separate the rings and place them in a large bowl.

    Marinate: Pour the buttermilk over the onion rings, making sure they are well coated. Let them sit for at least 30 minutes (you can refrigerate them for up to 2 hours).

      Mix Dry Ingredients: In a separate bowl, combine the flour, garlic powder, paprika, cayenne pepper (if using), salt, and black pepper.

        Coat the Rings: After marinating, remove the onion rings from the buttermilk and shake off excess liquid. Dredge each ring in the flour mixture until fully coated, then dip back into the buttermilk, and finally coat with breadcrumbs. For extra crunch, you can double coat them by repeating the last two steps.

          Heat the Oil: In a deep skillet or fryer, pour enough vegetable oil to submerge the onion rings. Heat the oil to 350°F (175°C). You can test the oil's readiness by dropping in a breadcrumb; it should sizzle immediately.
