For the Pretzel Bites:

2 cups all-purpose flour

1 cup warm water (110°F/45°C)

1 packet (2 ¼ teaspoons) active dry yeast

1 tablespoon granulated sugar

1 teaspoon salt

1/4 cup baking soda (for the boiling solution)

Flaky sea salt (for seasoning)

For the Vegan Cheese Sauce:

1 cup raw cashews (soaked for at least 2 hours)

1/4 cup nutritional yeast

1/2 cup water (more for desired consistency)

2 tablespoons lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Prepare the Pretzel Dough:

    - In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes, until frothy.

      - Add salt and gradually mix in the flour. Knead the dough for about 5-7 minutes until smooth and elastic. If too sticky, add more flour, a tablespoon at a time.

        - Cover the bowl with a damp cloth and let the dough rise in a warm environment for about 1 hour, or until it has doubled in size.

          Shape the Pretzel Bites:

            - Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

              - Once the dough has risen, punch it down and roll it into a long rope, about 1/2 inch thick. Cut the rope into bite-sized pieces (approximately 1 inch each).

                Boil and Bake the Pretzel Bites:

                  - In a large pot, bring about 6 cups of water to a boil and dissolve the baking soda in it.

                    - Carefully lower the pretzel bites into the boiling water, about 5-6 at a time, for around 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.

                      - Sprinkle the tops with flaky sea salt.

                        - Bake in the preheated oven for 12-15 minutes, or until golden brown.

                          Make the Vegan Cheese Sauce:

                            - Drain the soaked cashews and place them in a blender with nutritional yeast, water, lemon juice, garlic powder, onion powder, smoked paprika, and a pinch of salt.

                              - Blend on high until smooth and creamy. Adjust the water for desired consistency (thicker or thinner as preferred).

                                - Taste and adjust seasoning if necessary.

                                  Serve:

                                    - Remove the pretzel bites from the oven, let them cool slightly, and serve warm alongside the creamy vegan cheese sauce.
