4 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

1 ½ cups warm water (110°F/43°C)

2 tablespoons granulated sugar

1 teaspoon salt

1/4 cup baking soda

1 large egg, beaten (for egg wash)

Coarse sea salt (for sprinkling)

Optional: melted butter (for topping)

Activate Yeast: In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Make Dough: Add flour and salt to the yeast mixture. Mix until a rough dough forms. Turn onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.

      First Rise: Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

        Shape Pretzels: Preheat your oven to 450°F (232°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches long). Twist the rope into a pretzel shape, ensuring the ends are securely pressed down.

          Baking Soda Bath: In a large pot, bring about 8 cups of water to a simmer and add the baking soda carefully (it will bubble). Boil each pretzel for about 30 seconds, then remove with a slotted spoon and place on a lined baking sheet.
