Ingredients

1 pound (450g) beef sirloin, thinly sliced against the grain

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 cups beef broth

1 cup water

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

2 cups egg noodles

1 teaspoon dried thyme

1 teaspoon black pepper

1 cup frozen peas and carrots mix

Salt, to taste

Fresh parsley, for garnish

Instructions

In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and sauté for 3-4 minutes until translucent.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the sliced beef to the skillet and season with salt and pepper. Sear the beef until browned, about 3-5 minutes, stirring occasionally.

Pour in the beef broth, water, soy sauce, Worcestershire sauce, dried thyme, and black pepper. Bring the mixture to a simmer.

Add the egg noodles to the skillet and cover. Cook for about 10-12 minutes, stirring occasionally, until the noodles are tender and have absorbed some of the broth.

Stir in the frozen peas and carrots mix and cook for an additional 3-4 minutes until heated through.

Taste and adjust salt if necessary. Garnish with fresh parsley before serving.
