Ingredients

For the Wontons:

1 pound ground pork (or chicken)

1 tablespoon minced ginger

2 tablespoons green onions, finely chopped

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon cornstarch

1 package wonton wrappers

For the Broth:

6 cups chicken or vegetable broth

2 cloves garlic, minced

2 slices fresh ginger

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon salt

1 teaspoon black pepper

2 cups bok choy or spinach

Optional: sliced mushrooms, carrots, and green onions for garnish

Instructions

Prepare the Wontons:

    - In a mixing bowl, combine the ground pork, minced ginger, green onions, soy sauce, sesame oil, and cornstarch. Mix well until fully combined.

      - Take a wonton wrapper and place about a teaspoon of the filling in the center. Moisten the edges with water, fold the wrapper over to form a triangle, and press to seal. Then fold the two corners of the triangle over each other to form the wonton shape. Repeat with the remaining wrappers and filling.

        Make the Broth:

          - In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger slices, sautéing until fragrant (about 1 minute).

            - Pour in the chicken or vegetable broth, followed by the soy sauce, salt, and pepper. Bring the mixture to a boil, then reduce to a simmer to allow the flavors to meld for about 10 minutes.

              Cook the Wontons:

                - Gently add the prepared wontons to the simmering broth. Cook for about 5-7 minutes, or until the wontons float to the surface and are tender.

                  Add the Greens:

                    - Add the bok choy or spinach and any additional vegetables you desire. Cook for another 2-3 minutes until the greens are wilted and cooked through.

                      Serve:

                        - Ladle the soup into bowls, ensuring that each bowl has a good amount of broth, wontons, and greens. Garnish with sliced mushrooms, carrots, and green onions if using.
