Ingredients

2 cups rolled oats

1 cup almonds, chopped

1/2 cup honey

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup dried fruits (raisins, cranberries, or apricots)

1/4 cup mini chocolate chips (optional)

Cooking spray (for greasing the muffin tin)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped almonds, and salt. Mix well to ensure even distribution.

Combine Wet Ingredients: In a separate bowl, whisk together the honey, melted coconut oil, and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture over the dry ingredients and stir until all the oats and almonds are evenly coated. If using, fold in the dried fruits and mini chocolate chips.

Shape the Cups: Press the mixture into the greased muffin tin, packing it tightly into each cup to form a mold. Use your fingers or the back of a spoon to create a small well in the center for fillings if desired.

Bake: Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.

Cool and Remove: Allow the granola cups to cool in the tin for about 10 minutes. Then gently remove them and transfer to a wire rack to cool completely.

Serve or Store: Enjoy your Honey Almond Granola Cups as a healthy snack, breakfast, or dessert! Store leftovers in an airtight container for up to a week.
