1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup granulated sugar

1 cup buttermilk

2 large eggs, beaten

1/4 cup unsalted butter, melted

1/3 cup honey

1 tablespoon additional melted butter (for greasing the skillet)

Optional: a sprinkle of coarse sea salt for topping

Preheat the Oven: Preheat your oven to 400°F (200°C). Place a 9-inch cast-iron skillet inside to heat and grease it with 1 tablespoon of melted butter.

    Prepare Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, flour, baking powder, salt, and granulated sugar until well combined.

      Mix Wet Ingredients: In a separate bowl, combine the buttermilk, beaten eggs, melted butter, and honey. Whisk until smooth and well blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay.
