Ingredients

1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (room temperature)

2 large eggs (lightly beaten)

1/4 cup unsalted butter (melted, plus more for greasing)

1/4 cup honey

1 teaspoon vanilla extract

For the Honey Butter:

1/2 cup unsalted butter (softened)

1/4 cup honey

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Place a 10-inch cast-iron skillet inside while it heats up to ensure it’s hot and ready for the cornbread.

Mix Dry Ingredients: In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Whisk until well mixed.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, melted butter, honey, and vanilla extract until smooth and well combined.

Blend Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold the mixture together with a spatula until just combined. Be careful not to overmix; it's okay if there are a few lumps.

Prepare the Skillet: Remove the hot skillet from the oven (be cautious, it will be very hot). Add a tablespoon of melted butter and swirl it around to coat the skillet evenly.

Pour in the Batter: Immediately pour the cornbread batter into the hot skillet, then quickly return it to the oven.

Bake: Bake for 20-23 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Make Honey Butter: While the cornbread is baking, prepare the honey butter. In a small bowl, mix the softened butter, honey, and a pinch of salt until creamy and well incorporated.

Cool and Serve: Once baked, remove the cornbread from the oven and let it cool in the skillet for about 10 minutes. Slice it into wedges and serve warm with generous pats of honey butter on top.
