6 bone-in chicken thighs, skin-on

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar (or apple cider vinegar)

1 tablespoon cornstarch

2 tablespoons water

Salt and black pepper, to taste

2 tablespoons vegetable oil

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine honey, soy sauce, minced garlic, grated ginger, and rice vinegar. Mix well. Add the chicken thighs to the marinade and ensure they are well coated. Cover and refrigerate for at least 30 minutes (or up to overnight for best flavor).

    Prepare the Pan: Heat vegetable oil in a large skillet over medium-high heat. Once hot, remove chicken from the marinade (reserve the marinade for later) and season both sides with salt and pepper.

      Sear the Chicken: Place the chicken thighs skin-side down in the skillet and sear for about 5-7 minutes or until the skin is golden and crispy. Flip the chicken and sear the other side for an additional 5 minutes.

        Cook the Sauce: Pour the reserved marinade into the skillet with the chicken. Bring to a simmer and let cook for about 10 minutes, allowing the sauce to thicken and coat the chicken.

          Thicken the Sauce: In a small bowl, mix cornstarch and water to create a slurry. Gradually add this slurry to the skillet, stirring continuously until the sauce thickens to your desired consistency.

            Glaze the Chicken: Reduce heat to low, and let the chicken simmer in the sauce for another 5 minutes, ensuring it's cooked through (internal temperature should reach 165°F).
