1 lb baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons honey

2 tablespoons unsalted butter

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt, to taste

Freshly cracked black pepper, to taste

1 tablespoon lemon juice

Zest of 1 lemon (optional for extra freshness)

Prepare the Carrots: If using regular carrots, cut them into sticks about 3 inches long. If using baby carrots, rinse them under cool water and set aside.

    Cook the Carrots: In a large pot, bring water to a boil and add the carrots. Cook for about 5-7 minutes or until just tender but still crisp. You want them al dente. Drain the carrots and set aside.

      Make the Glaze: In the same pot, melt the butter over medium heat. Once melted, add the honey and stir to combine.

        Add Flavors: Add the fresh thyme, salt, and pepper to the honey-butter mixture. Stir well to combine and let it simmer for about 1 minute to bloom the flavors.

          Glaze the Carrots: Add the cooked carrots to the honey glaze. Toss gently to coat the carrots evenly. Allow them to sauté in the glaze for an additional 3-4 minutes until they are heated through and well-coated.

            Finish with Citrus: Remove the pot from heat and squeeze in the lemon juice. If desired, add the lemon zest for a brighter flavor. Toss the carrots again to evenly distribute.

              Serve: Transfer the honey-glazed carrots to a serving dish, garnishing with a few extra thyme leaves if desired. Enjoy warm!
