4 boneless, skinless chicken breasts

1/3 cup honey

1/4 cup fresh lemon juice

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Dijon mustard

1 teaspoon soy sauce

1/2 teaspoon salt

1/4 teaspoon black pepper

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together the honey, lemon juice, olive oil, minced garlic, Dijon mustard, soy sauce, salt, black pepper, and lemon zest. Reserve 1/4 cup of the marinade for glazing later. Add the chicken breasts to the bowl, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

    Preheat the Grill or Oven: If you're grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 375°F (190°C).

      Cook the Chicken: Remove the chicken from the marinade and discard the used marinade. If grilling, place the chicken on the grill and cook for about 6-7 minutes on each side, or until an internal temperature of 165°F (74°C) is reached. If baking, place the chicken in a lightly greased baking dish and bake for 25-30 minutes, basting with the reserved marinade halfway through.

        Glaze the Chicken: During the last few minutes of cooking, brush the chicken breasts with the reserved marinade to create a beautiful glaze.

          Rest and Serve: Once cooked, remove the chicken from the heat and let it rest for 5 minutes. This allows the juices to redistribute and keeps the chicken moist.
