Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream the Butter and Sugar: In a large bowl, using an electric mixer, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Flavoring: Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.

Combine Wet and Dry Ingredients: Alternately add the dry flour mixture and the buttermilk to the butter mixture, starting and ending with the flour. Mix until just combined, being careful not to overmix.

Fold in Peaches: Gently fold in the diced peaches into the batter.

Fill Cupcake Liners: Fill each cupcake liner about two-thirds full with the batter.

Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cupcakes: Remove from the oven and let the cupcakes cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Prepare the Frosting: In a medium bowl, using an electric mixer, beat the softened cream cheese and butter together until smooth and creamy. Gradually add in the powdered sugar, honey, vanilla extract, and a pinch of salt. Beat until the frosting is fluffy and well combined.

Frost the Cupcakes: Once the cupcakes are completely cooled, use a piping bag or a spatula to frost the tops with the cream cheese frosting.

Decorate and Serve: Optional: Top with thin slices of peach and a light drizzle of honey for an elegant touch.
