Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup whole milk

1 pound boneless, skinless chicken thighs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper

1/2 cup hot honey (store-bought or homemade)

Fresh thyme or parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Prepare the Biscuit Dough: In a large bowl, combine the flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the milk until just combined. Do not overmix.

Shape the Biscuits: Turn the dough onto a floured surface and gently pat it into a rectangle about 1-inch thick. Cut out biscuits using a round cutter and place them on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until golden brown.

Cook the Chicken: While the biscuits bake, heat the olive oil in a skillet over medium-high heat. Season the chicken thighs with garlic powder, paprika, cayenne pepper, and salt. Once the skillet is hot, add the chicken and cook for 5-7 minutes per side, or until fully cooked and golden brown.

Make Your Hot Honey: If you prefer homemade hot honey, simply combine equal parts honey and a hot sauce of your choice in a small saucepan over low heat until warmed and well mixed.

Assemble the Biscuits: Once the biscuits are done, cut them in half. Place a piece of the cooked chicken on the bottom half of each biscuit. Drizzle generously with hot honey, and then top with the other half of the biscuit.

Garnish and Serve: If desired, garnish with fresh thyme or parsley. Serve immediately while the biscuits are warm and enjoy the sweet and spicy flavors!
