For the Chicken:

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup all-purpose flour

1 teaspoon baking powder

Vegetable oil (for frying)

For the Hot Honey Sauce:

1/2 cup honey

2 tablespoons hot sauce (adjust to desired spice level)

1/2 teaspoon crushed red pepper flakes

1 tablespoon apple cider vinegar

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter (cold, cubed)

3/4 cup milk

1 tablespoon honey (for brushing on top)

To Serve:

Fresh arugula or spinach (optional)

Instructions
 

Marinate the Chicken:

    - In a medium bowl, combine the chicken thighs, buttermilk, salt, pepper, garlic powder, and smoked paprika. Cover and refrigerate for at least 1 hour or overnight for maximum flavor.

      Prepare the Hot Honey Sauce:

        - In a small saucepan over low heat, whisk together honey, hot sauce, crushed red pepper flakes, and apple cider vinegar. Warm just until combined, then remove from heat and set aside.

          Make the Biscuits:

            - Preheat your oven to 450°F (230°C). In a large mixing bowl, whisk together flour, baking powder, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

              - Pour in the milk and mix until just combined. Turn the dough onto a floured surface and gently knead 2-3 times to bring it together. Pat out to about 1-inch thickness.

                - Cut into rounds using a biscuit cutter, and place on a baking sheet lined with parchment paper. Brush the tops with honey. Bake for 12-15 minutes or until golden brown.

                  Fry the Chicken:

                    - In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat. Remove the marinated chicken from the buttermilk and dredge in flour, shaking off excess.

                      - Fry the chicken in batches for 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F or 75°C). Remove from the skillet and place on a paper towel-lined plate.

                        Assemble the Biscuits:

                          - Slice the baked biscuits in half. Place a piece of fried chicken on the bottom half of each biscuit, drizzle with hot honey sauce, add some fresh arugula or spinach if desired, and top with the other half of the biscuit.

                            Serve:
