Ingredients

2 cups raw cashews

1/4 cup honey

1 tablespoon olive oil

1 teaspoon sea salt

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

Fresh rosemary, chopped (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Cashew Mixture: In a large bowl, combine the raw cashews, honey, olive oil, sea salt, cayenne pepper, smoked paprika, garlic powder, and black pepper. Stir until all the cashews are evenly coated with the mixture.

Spread on Baking Sheet: Pour the cashew mixture onto the prepared baking sheet, spreading them out into a single layer to ensure even roasting.

Roast the Cashews: Bake in the preheated oven for 10-12 minutes. Stir the cashews carefully about halfway through to ensure they roast evenly. Keep an eye on them to prevent burning; they should turn golden brown and fragrant.

Cool Down: Once roasted, remove the baking sheet from the oven and let the cashews cool completely on the sheet. They will crisp up as they cool.

Garnish (Optional): For a touch of freshness, sprinkle chopped rosemary over the top once the cashews are cool.

Store: Once cooled completely, transfer the cashews to an airtight container. They can be stored at room temperature for up to one week.
