Huli Huli Chicken with Huli Huli Sauce

Ingredients
  

For the Huli Huli Sauce:

1 cup soy sauce

1 cup pineapple juice (fresh or canned)

1/2 cup brown sugar

1/4 cup ketchup

1/4 cup apple cider vinegar

1 tablespoon minced garlic

1 tablespoon minced ginger

1 teaspoon sesame oil

1 teaspoon red pepper flakes (optional, for heat)

For the Chicken:

4 large chicken thighs, bone-in, skin-on (or 4 chicken breasts for a leaner option)

Salt and pepper, to taste

Sliced green onions and sesame seeds for garnish

Instructions
 

Prepare the Sauce:

    - In a medium saucepan, combine soy sauce, pineapple juice, brown sugar, ketchup, apple cider vinegar, minced garlic, minced ginger, sesame oil, and red pepper flakes.

      - Bring the mixture to a gentle boil over medium heat, then reduce the heat and let it simmer for about 10-15 minutes until it thickens slightly. Stir occasionally to prevent sticking. Once ready, remove from heat and set aside.

        Marinate the Chicken:

          - Season the chicken thighs with salt and pepper.

            - In a large bowl or resealable plastic bag, pour half of the prepared Huli Huli sauce over the chicken.

              - Make sure the chicken is well-coated, then cover the bowl or seal the bag and refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

                Grill the Chicken:

                  - Preheat your grill to medium-high heat (about 400°F/200°C).

                    - Remove the chicken from the marinade and shake off excess liquid (don’t discard the marinade yet).

                      - Place the chicken skin side down on the grill. Cook for about 6-7 minutes or until crispy and nicely charred.

                        - Flip the chicken and brush both sides with some of the reserved Huli Huli sauce. Continue to grill for an additional 6-7 minutes, until the internal temperature reaches 165°F (75°C).

                          Glaze and Serve:

                            - Once cooked, remove the chicken from the grill and let it rest for a few minutes. This helps to retain the juices.

                              - For an extra layer of flavor, brush more Huli Huli sauce over the chicken while it rests.

                                - Slice the chicken, drizzle with additional sauce if desired, and garnish with sliced green onions and sesame seeds.

                                  Serve & Enjoy:

                                    - Serve the Huli Huli Chicken with steamed rice, grilled vegetables, or a fresh salad, accompanied by extra Huli Huli sauce on the side for dipping.
