8 oz (225g) cream cheese, softened

1/2 cup (100g) granulated sugar

1 tsp vanilla extract

1 large egg

1/2 cup (60g) all-purpose flour

1/2 cup (60g) crushed graham crackers

1/4 cup (30g) powdered sugar (for dusting)

1/4 tsp cinnamon (optional)

2 cups (480ml) vegetable oil (for frying)

1 package (8 oz) spring roll wrappers (about 12-14 wrappers)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and egg. Beat with a mixer until smooth and creamy. Set aside.

    Assemble the Bites: Lay a spring roll wrapper on a clean surface, with one corner facing you. Place about 1 tablespoon of the cheesecake filling near the bottom corner of the wrapper. Fold the corner over the filling, then fold in the side corners and roll up tightly to form a small parcel. Seal the edges with a little water. Repeat with the remaining wrappers and filling.

      Prepare the Oil: In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of leftover wrapper into it; if it sizzles, it's ready.

        Fry the Cheesecake Bites: Carefully place a few wrapped bites into the hot oil at a time, avoiding overcrowding. Fry them for about 2-3 minutes or until they are golden brown and crispy, turning them occasionally for even cooking. Remove them with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

          Dust and Serve: In a small bowl, mix the powdered sugar and cinnamon. While the bites are still warm, dust them generously with the powdered sugar mixture. Serve immediately with a side of chocolate or caramel sauce for dipping, if desired.
