Ingredients
  

2 lbs beef chuck, cut into 1-inch cubes

4 medium carrots, sliced into rounds

3 medium potatoes, diced into cubes

1 medium onion, chopped

3 cloves garlic, minced

1 cup beef broth

1 cup red wine (optional, replace with additional broth if desired)

2 tablespoons tomato paste

2 teaspoons Worcestershire sauce

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon cornstarch (for thickening, optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Beef: Set your Instant Pot to the “Sauté” function. Add olive oil and heat until shimmering. Season the beef cubes with salt and pepper, then add them in batches to the pot, browning on all sides. Remove the beef and set aside.

    Sauté Aromatics: In the same pot, add the chopped onions and sauté for about 2-3 minutes until they become translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.

      Deglaze the Pot: Pour in the red wine (or extra broth) and use a wooden spoon to scrape the brown bits from the bottom of the pot. This adds great flavor to your stew.

        Combine Ingredients: Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, and mixed vegetables: carrots and potatoes. Add the beef back into the pot along with any juices it released.

          Add Broth: Pour in the beef broth and give everything a gentle stir. Add the bay leaf on top.

            Pressure Cook: Close the lid of the Instant Pot, ensuring the valve is sealed. Set it to “Manual” or “Pressure Cook” for 35 minutes.

              Natural Release: Once cooking is complete, let the pressure release naturally for about 10-15 minutes, then carefully quick-release any remaining pressure.

                Thicken the Stew (optional): If you prefer a thicker stew, mix the cornstarch with a little water to create a slurry, then stir it into the stew. Set the pot to “Sauté” and cook for an additional 5-7 minutes until thickened.

                  Serve: Taste and adjust seasoning if necessary. Remove the bay leaf. Ladle the stew into bowls, garnish with fresh parsley, and enjoy!
