2 lbs boneless, skinless chicken thighs

1 cup long-grain white rice

1 medium onion, chopped

3 cloves garlic, minced

1 ½ cups low-sodium chicken broth

1 cup frozen peas and carrots mix

1 teaspoon dried thyme

1 teaspoon paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 tablespoons olive oil

1 tablespoon soy sauce (optional)

Fresh parsley for garnish (optional)

Instructions
 

Sauté the Aromatics: Turn the Instant Pot on to the 'Sauté' setting. Once hot, add olive oil. After about a minute, add the chopped onion and garlic. Sauté until softened and fragrant, about 3-4 minutes.

    Brown the Chicken: Add the chicken thighs to the pot and season with paprika, thyme, salt, and pepper. Cook for about 3-4 minutes per side until they are lightly browned (they don’t need to be fully cooked through).

      Add the Rice and Broth: Pour in the rice, chicken broth, and soy sauce (if using). Gently stir everything together, making sure the rice is submerged in the liquid.

        Pressure Cook: Close the lid of the Instant Pot, ensuring the valve is in the sealing position. Set to 'Manual' or 'Pressure Cook' for 10 minutes on high pressure.

          Natural Release: After the cooking time is complete, allow the Instant Pot to naturally release pressure for 10 minutes, then switch to quick release to release any remaining pressure.

            Stir in the Veggies: Open the lid and add the frozen peas and carrots. Stir everything gently, and allow the residual heat to warm the vegetables for about 3-5 minutes.

              Serve: Fluff the rice with a fork, and serve your delicious chicken and rice warm, garnished with fresh parsley if desired.
