Ingredients

1 pound large shrimp, peeled and deveined

8 ounces linguine or spaghetti

4 tablespoons unsalted butter

2 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 cup white wine (such as Sauvignon Blanc)

1 lemon (zested and juiced)

1/4 cup fresh parsley, chopped

Salt and freshly ground black pepper, to taste

Fresh lemon wedges, for serving

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Drain, reserving 1 cup of the pasta cooking water.

Sauté Shrimp: In a large skillet, melt 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant (do not let it burn).

Add Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Cook for 2-3 minutes, or until the shrimp turn pink and opaque. Season with salt and pepper.

Create Sauce: Pour in the white wine and lemon juice. Bring to a simmer for about 2 minutes to reduce slightly. Stir in the lemon zest and the remaining 2 tablespoons of butter to create a luxurious sauce.

Combine with Pasta: Add the drained pasta directly to the skillet with the shrimp and sauce. Toss to combine, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.

Finish with Parsley: Remove from heat, and stir in the chopped parsley. Adjust seasoning to taste.

Serve: Plate the shrimp scampi, serving with extra lemon wedges on the side for squeezing over. Enjoy your delightful dish!
