1 lb boneless, skinless chicken breasts

1 medium onion, diced

4 cloves garlic, minced

2 cups chicken broth

1 (14 oz) can diced tomatoes, undrained

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon dried basil

Salt and pepper, to taste

1 cup small pasta (like ditalini or elbow)

Fresh parsley, chopped (for garnish)

Crusty bread (for serving)

Instructions
 

Prep the Chicken: Place the boneless, skinless chicken breasts at the bottom of the slow cooker.

    Add Aromatics: Sprinkle the diced onion and minced garlic over the chicken.

      Pour in Broth: Add the chicken broth and undrained diced tomatoes to the slow cooker.

        Season it: Stir in the Italian seasoning, dried basil, salt, and pepper. Make sure everything is well mixed.

          Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.

            Shred the Chicken: Once cooked, remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken back into the pot.

              Creamy Base: Stir in the heavy cream and grated Parmesan cheese until fully combined. Let it heat through for an additional 15-20 minutes, allowing the soup to thicken slightly.

                Cook Pasta: In a separate pot, cook the small pasta according to package instructions. Drain and set aside.

                  Combine: Just before serving, stir in the cooked pasta. Adjust the seasoning with additional salt and pepper if necessary.

                    Serve: Ladle the creamy chicken parmesan soup into bowls, garnish with fresh parsley, and serve with crusty bread for dipping.
