Ingredients
  

1 lb ground beef or Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

1 can (15 oz) ricotta cheese

1 cup shredded mozzarella cheese, plus more for topping

1 cup grated Parmesan cheese

2 teaspoons dried oregano

2 teaspoons dried basil

1 teaspoon salt

1/2 teaspoon black pepper

8-10 lasagna noodles, broken into pieces

Fresh basil or parsley for garnish (optional)

Instructions
 

In a large pot, over medium heat, brown the ground beef or Italian sausage until fully cooked. Drain excess fat.

    Add diced onion and minced garlic to the pot, cooking until the onion becomes translucent (about 3-4 minutes).

      Stir in the crushed tomatoes, broth, oregano, basil, salt, and pepper. Bring the mixture to a boil.

        Once boiling, reduce the heat and add the broken lasagna noodles. Simmer for about 10-15 minutes or until noodles are tender.

          While noodles are cooking, in a separate bowl, mix together the ricotta cheese, mozzarella cheese, and half of the Parmesan cheese until well combined.

            Once the noodles are cooked, add the cheese mixture to the soup. Stir gently to combine and allow it to melt into the soup for about 2-3 minutes.

              Serve the soup hot, garnished with the remaining Parmesan cheese and fresh herbs if desired. Enjoy your delightful lasagna soup!
