1 cup crushed pineapple (drained)

1/2 cup unsweetened coconut flakes

1 cup almond flour

1/2 cup rolled oats

1/4 cup honey or maple syrup

1/3 cup coconut oil (melted)

1/2 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp salt

1/2 teaspoon cinnamon

1/4 cup chopped walnuts (optional)

1/4 cup mini chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine almond flour, rolled oats, baking powder, salt, and cinnamon. Mix well until evenly distributed.

      Combine Wet Ingredients: In another bowl, mix together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth and combined.

        Incorporate Pineapple: Add the drained crushed pineapple to the wet mixture and stir until well combined. If using, fold in the chopped walnuts and mini chocolate chips at this point.

          Combine All Ingredients: Pour the wet mixture into the dry ingredients and stir until everything is well combined and forms a sticky dough.

            Transfer to Baking Dish: Pour the mixture into the prepared baking dish and spread it out evenly, pressing down firmly to pack it tightly.

              Bake the Bars: Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.

                Cool and Slice: Allow the bars to cool in the pan for about 10 minutes, then use the parchment overhang to lift them out onto a cutting board. Allow to cool completely before slicing into squares.
