2 ribeye steaks (1 inch thick)

Salt and black pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1/2 cup bourbon

1 cup heavy cream

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Prepare the Steaks: Take the ribeye steaks out of the refrigerator and allow them to come to room temperature (about 30 minutes). Season generously with salt and black pepper on both sides.

    Sear the Steaks: Heat olive oil in a large skillet over medium-high heat. Once hot, add the steaks. Sear for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Remove from the skillet and let them rest on a plate, loosely covered with foil.

      Make the Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn it.

        Deglaze with Bourbon: Carefully add the bourbon to the skillet, scraping the bottom to deglaze the pan. Allow it to simmer for about 3-4 minutes, reducing it by half.

          Create the Cream Sauce: Stir in the heavy cream, Dijon mustard, Worcestershire sauce, smoked paprika, and thyme. Bring the mixture to a simmer and cook for an additional 5-7 minutes, or until the sauce thickens slightly.

            Combine and Serve: Once the sauce has thickened, return the steaks to the skillet, spooning the sauce over them to coat. Cook for another minute to warm the steaks through.
