Ingredients
  

2 medium zucchinis, grated

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

2 large eggs, beaten

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

Olive oil spray (for baking)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large bowl, combine the grated zucchinis with a teaspoon of salt. Let them sit for about 10 minutes to remove excess moisture. Afterward, squeeze the zucchinis in a clean kitchen towel to wring out any remaining liquid.

      In the same bowl, add the breadcrumbs, Parmesan cheese, beaten eggs, minced garlic, oregano, black pepper, and red pepper flakes (if using). Mix well until all ingredients are thoroughly combined.

        Using your hands, form the mixture into small bite-sized patties, about 1 inch thick. Place them on the prepared baking sheet, spaced about 2 inches apart.

          Lightly spray the tops of the bites with olive oil spray to help them crisp up during baking.

            Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy, flipping halfway through for even cooking.

              Remove from the oven and let cool slightly before serving.
