Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsweetened cocoa powder

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup fresh blackberries (plus extra for garnish)

½ cup boiling water

Powdered sugar (for dusting)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Mix Wet Ingredients: In another bowl, beat the eggs, then add the milk, vegetable oil, and vanilla extract. Mix well until fully incorporated.

Combine Ingredients: Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.

Add Blackberries: Gently fold in the fresh blackberries, ensuring they are evenly distributed throughout the batter.

Add Boiling Water: Finally, stir in the boiling water until the batter is smooth. The batter will be thin, which is normal.

Bake: Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, dust with powdered sugar and garnish with extra blackberries if desired.

Enjoy: Slice the cake and serve it on its own or with a dollop of whipped cream for an added touch!
