4 boneless, skinless chicken breasts (about 1.5 lbs)

1 cup fresh basil leaves, chopped

1/2 cup grated Parmesan cheese

1 cup breadcrumbs (preferably Italian seasoned)

2 large eggs

1/4 cup all-purpose flour

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

1/2 cup olive oil (for frying)

Lemon wedges (for serving)

Fresh basil leaves (for garnish)

Prepare the Chicken: Place the chicken breasts between two pieces of plastic wrap or parchment paper. Pound them to about 1/2 inch thickness using a meat mallet for even cooking.

    Make the Breading Mixture: In one shallow dish, combine the flour, salt, pepper, and oregano. In another dish, whisk the eggs and mix in the minced garlic and chopped basil. In a third dish, combine the breadcrumbs and grated Parmesan cheese.

      Bread the Chicken:

        - Dredge each chicken cutlet first in the flour mixture, shaking off the excess.

          - Next, dip it into the egg mixture, allowing the excess to drip off.

            - Finally, coat it thoroughly in the breadcrumb and Parmesan mixture, pressing gently to adhere.

              Heat the Oil: In a large skillet, heat the olive oil over medium heat. Ensure it's hot but not smoking.

                Cook the Cutlets: Once the oil is hot, add the breaded chicken cutlets to the skillet in batches (avoid overcrowding). Cook for about 4-5 minutes on each side, or until golden brown and fully cooked through (internal temperature should reach 165°F/74°C).

                  Drain and Serve: Remove the cooked cutlets from the skillet and place them on a paper towel-lined plate to absorb any excess oil. Repeat with remaining cutlets.

                    Garnish & Serve: Plate the cutlets, garnish with fresh basil leaves, and serve with lemon wedges on the side for a zesty kick.
