1 large Italian hoagie roll

4 oz salami, sliced into strips

4 oz provolone cheese, sliced into strips

4 oz capicola or prosciutto, sliced into strips

1 cup romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cucumber, diced

1/4 cup pepperoncini, sliced

1/4 cup black olives, pitted and halved

1/4 cup red wine vinegar

1/4 cup olive oil

1 tsp dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Prepare the Salad Base: In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, diced cucumber, sliced red onion, pepperoncini, and black olives. Toss gently to mix all the ingredients evenly.

    Make the Dressing: In a small bowl or jar, whisk together the red wine vinegar, olive oil, dried oregano, salt, and pepper. Adjust the seasoning as needed. If using a jar, you can shake well until the ingredients are fully combined.

      Assemble the Grinder: Cut the Italian hoagie roll in half lengthwise and slightly toast it if desired. Layer the salami, provolone, and capicola or prosciutto generously over one half of the roll.

        Dress the Salad: Pour the prepared dressing over the salad mixture and toss until all the veggies are well coated.

          Build the Salad on the Roll: Spoon the dressed salad mixture onto the sandwich loaded with meats and cheeses. Replace the top of the hoagie roll.

            Serve & Garnish: Cut the complete grinder in half. Garnish each half with fresh basil leaves. Serve immediately or wrap in parchment paper for a picnic treat!
