1 cup jalapeños, diced (fresh or pickled, adjust to taste)

1 lb ground beef or turkey

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 can (15 oz) corn, drained

1 can (15 oz) black beans, drained and rinsed

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper, to taste

4 large eggs

1 cup sour cream

1 cup crushed tortilla chips (plus extra for topping)

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, about 5-7 minutes. Drain any excess grease.

      Sauté Vegetables: Add the chopped onion and minced garlic to the skillet with the meat. Sauté until the onion is translucent, about 3-4 minutes.

        Mix in Spices: Stir in the diced jalapeños, chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 2-3 minutes until fragrant.

          Combine Cheese Mixture: In a mixing bowl, combine the softened cream cheese, sour cream, and eggs. Whisk until smooth, then stir in the cheddar and mozzarella cheeses, along with corn and black beans.

            Assemble the Casserole: In a large baking dish, layer half of the tortilla chips on the bottom. Pour half of the meat and vegetable mixture over the chips. Then, spread half of the cheese mixture over that layer. Repeat the layers with the remaining chips, meat, and cheese mixture.

              Top it Off: Finish by sprinkling any remaining crushed tortilla chips on top for added crunch.

                Bake: Place the casserole in the preheated oven and bake for approximately 30-35 minutes, or until the top is bubbly and golden.

                  Let it Cool: Once done, remove from the oven and let it cool for about 5-10 minutes.
