Juicy Margarita Grilled Shrimp Kabobs

Ingredients
  

1 pound large shrimp, peeled and deveined

1/4 cup fresh lime juice

1/4 cup orange juice

1/4 cup tequila (optional, for an authentic margarita flavor)

2 tablespoons honey or agave syrup

3 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

2 tablespoons olive oil

1 red bell pepper, cut into 1-inch squares

1 yellow bell pepper, cut into 1-inch squares

1 small red onion, cut into wedges

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a mixing bowl, whisk together the lime juice, orange juice, tequila, honey, minced garlic, chili powder, cumin, cayenne pepper, salt, and pepper. Add the shrimp to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes, but no longer than 1 hour.

    Prepare the Vegetables: While the shrimp is marinating, prepare the vegetables by cutting the bell peppers and red onion into 1-inch pieces.

      Assemble the Kabobs: Preheat your grill to medium-high heat. Thread the marinated shrimp onto skewers, alternating with pieces of bell pepper and red onion. Leave a little space between each shrimp and vegetable for even cooking.

        Grill the Kabobs: Drizzle olive oil over the assembled kabobs to prevent sticking. Place the skewers on the preheated grill and cook for 2-3 minutes per side, or until the shrimp are opaque and cooked through, about 8-10 minutes total.

          Serve: Remove the kabobs from the grill and let them rest for a minute. Garnish with fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.
