Ingredients
  

For the Patty Melts:

1 lb ground beef (80/20 blend for maximum juiciness)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

4 slices of rye bread

4 slices of cheddar cheese

1 medium onion, thinly sliced

2 tbsp unsalted butter

For the Zesty Secret Sauce:

1/2 cup mayonnaise

2 tbsp ketchup

1 tbsp Dijon mustard

1 tbsp pickle relish

1 tsp Worcestershire sauce

1/2 tsp smoked paprika

Salt and pepper, to taste

Instructions
 

Prepare the Zesty Secret Sauce:

    - In a mixing bowl, combine the mayonnaise, ketchup, Dijon mustard, pickle relish, Worcestershire sauce, smoked paprika, salt, and pepper. Mix well until smooth. Taste and adjust seasoning if needed. Set aside.

      Prepare the Beef Patties:

        - In a large bowl, combine the ground beef, garlic powder, onion powder, salt, and pepper. Mix gently to avoid overworking the meat. Form into two equal-sized patties, about 3/4-inch thick. Use your thumb to create a slight indentation in the center of each patty to prevent puffing during cooking.

          Cook the Onions:

            - In a skillet over medium heat, melt 1 tablespoon of butter. Add the thinly sliced onions and cook, stirring occasionally, until they are softened and caramelized, about 10-12 minutes. Remove them from the skillet and set aside.

              Cook the Patties:

                - In the same skillet, increase the heat to medium-high. Add the beef patties and sear for about 3-4 minutes on one side. Flip the patties, add a slice of cheddar cheese on each patty, and cook for another 3-4 minutes, until the cheese is melted and the patties are cooked to your desired doneness.

                  Assemble the Patty Melts:

                    - While the patties are cooking, butter one side of each slice of rye bread. Place one slice, buttered side down, onto a clean surface. Spread a generous amount of the zesty secret sauce on the unbuttered side, place a cheesy patty on top, followed by a portion of caramelized onions. Top with another slice of rye bread, buttered side up.

                      Grill the Patty Melts:

                        - In the same skillet used for the patties, reduce the heat to medium. Carefully place the assembled patty melt in the skillet. Cook for about 3-4 minutes on one side until golden brown. Carefully flip and cook for another 3-4 minutes, until the second side is golden and the sandwich is heated throughout.

                          Serve:

                            - Remove from the skillet, slice in half, and serve immediately with extra zesty sauce on the side for dipping!
