Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup unsalted butter, softened

1 1/4 cups granulated sugar

1/2 cup packed brown sugar

2 large eggs

1 tablespoon vanilla extract

1/4 teaspoon almond extract

1/4 cup buttermilk

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

1 teaspoon vanilla extract (for glaze)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Cream Butters and Sugars: In a large mixing bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, approximately 3-4 minutes.

Add Eggs and Extracts: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla and almond extracts.

Incorporate Dry Ingredients: Gradually add the dry flour mixture to the wet mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.

Scoop Cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden (the centers may look slightly underbaked, which is fine).

Cool Cookies: Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Prepare the Glaze: In a small mixing bowl, combine the powdered sugar, milk, and vanilla extract. Whisk until smooth. If needed, adjust the consistency with more milk or powdered sugar.

Glaze the Cookies: Once the cookies are completely cooled, drizzle or dip them in the prepared glaze, allowing any excess to drip off.

Enjoy: Let the glaze set for a few minutes before serving. Enjoy your Kentucky Butter Cake Cookies with a glass of milk or your favorite beverage!
